# Low-Fat High-Protein Burgers

17/08/2026 · 6 min · 🕐 25 min · 🔥 450 cal · 🥩 40g protein · 🥦 4g fiber

Burgers aren't the enemy — fat percentage and the sauce are. Swap to lean mince and a yogurt sauce and you get ~40g protein and ~450 kcal per burger, no bunless sacrifice required.

**Makes 4 burgers · Prep 10 min · Cook 15 min**

Burgers have a bad reputation they don't deserve. The problem was never the beef — it's the 80/20 mince, the mayo-drenched sauce, and the second and third patty nobody counts. Fix the fat percentage and swap the sauce, and a burger is one of the most efficient high-protein meals you can make. Done right, you're looking at roughly 40g of protein and 450 calories per burger — mostly from the meat itself, not powder.

## Ingredients

- 600g lean mince (93–97% lean beef, or see poultry variant below)
- 1 egg
- 1 small onion, finely grated
- 2 garlic cloves, minced (or 1 tsp garlic powder)
- 1 tsp smoked paprika
- ¾ tsp salt
- ½ tsp black pepper
- 4 whole-grain burger buns (or a lower-carb bun swap — see notes)
- 150g Greek yogurt or skyr (0% fat)
- 1 tsp Dijon mustard, lettuce, sliced tomato

**Poultry variant:** swap the beef for 600g 93% lean ground turkey or chicken thigh mince. Same method, same seasoning — poultry mince is wetter, so handle it even more gently and don't skip the rest.

## Method

**1. Mix the patties — 5 min** In a large bowl, combine the mince, egg, grated onion, garlic, smoked paprika, salt and pepper. Mix with your hands just until combined — 15–20 seconds, no more. Overworking the mince is the single biggest reason lean burgers turn out dense and dry; you want the fat and protein strands barely bound, not compacted.

**2. Shape — 2 min** Divide into 4 and shape into patties about 2cm thick, slightly wider than your buns since they'll shrink as they cook. Press a shallow dimple into the center of each with your thumb — it stops the middle from puffing up into a dome as the protein contracts.

**3. Rest — 10 min** Let the patties sit at room temperature for 10 minutes before they hit heat. This isn't optional for lean mince: cold patties on high heat seize and squeeze out moisture before the outside even browns.

**4. Cook — 8–10 min** Grill or pan over medium-high heat. 3–4 minutes per side for beef (internal 71°C), one flip only — every extra flip is more moisture pushed out through a cut surface that has very little fat left to replace it. Poultry needs 4–5 minutes per side and a slightly higher internal temp (74°C). Don't press the patty with the spatula at any point.

**5. Rest again — 3 min** Pull the patties off heat and let them sit for 3 minutes before building the burger. This is where the juice redistributes instead of running out onto the plate the second you bite in.

**6. Sauce — 2 min** Mix the yogurt or skyr with the mustard and a pinch of salt. This replaces mayo almost calorie-for-calorie in richness and tang, at a fraction of the fat, and adds protein instead of subtracting it.

**7. Build** Toast the buns cut-side down in the same pan for 30 seconds. Spread the yogurt sauce on both halves, layer lettuce, the patty, tomato, and close it up.

## Notes

> **The sauce swap is doing more work than the mince swap.** Two tablespoons of mayo is roughly 180 calories and 20g of fat for zero protein. The same amount of yogurt sauce is under 30 calories and adds protein. That single change is worth more to your macros than agonizing over 93% vs 95% lean.

Don't skip the resting steps — before and after cooking. Lean mince has less fat to buffer mistakes than the 80/20 you're used to, so the technique matters more here than the ingredient list.

If you want a lower-carb bun, swap to a brioche-style protein bun or a large lettuce wrap — the patty and sauce macros don't change, only the bun line does.

Patties still resting and you're starving? A banana and a [protein drink](https://dancristian.fit/posts/liquid-ozempic-protein-stack) holds you over — easy to bulk-buy, no prep, and it keeps you out of the pantry while the pan's still hot.
